Citrus Zest Bread
Ingredients
  • 1 cup grated orange zest
  • 1/2 cup white sugar
  • 1/4 cup water
  • 2 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup white sugar
  • 1 egg
  • 1 1/4 cups milk
  • 3 tablespoons melted butter
Instructions
1
Begin by submerging the orange zest in a saucepan filled with sufficient water to cover it; heat until boiling point and cook for 5 minutes.
2
Strain the mixture through a fine-mesh sieve; re-add the zest to the saucepan. Discard the liquid that was previously used.
3
Add 1/2 cup of granulated sugar and 1/4 cup of water to the saucepan; reheat until boiling point, then decrease heat to a moderate level. Cook, stirring continuously, until the water has evaporated; let the zest cool down until it reaches a lukewarm temperature.
4
Next, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and coat a 9x5-inch loaf pan with butter or cooking spray.
5
In a separate bowl, whisk together the flour, baking powder, and salt until well combined; set it aside for now.
6
In another bowl, whisk together 1 cup of sugar and an egg until smooth; add milk, melted butter, and the cooled zest to this mixture. Stir until everything is well combined; then add the flour mixture just until it reaches a moist consistency.
7
Pour the batter into the prepared loaf pan and bake in the preheated oven until a toothpick inserted into the center comes out clean, taking 55 to 65 minutes.
8
Remove the loaf from the pan after it has cooled for 10 minutes and let it cool completely on a wire rack.
