- 1/3 cup sliced almonds
- 2 tablespoons minced shallot
- 1/2 cup olive oil
- 2 tablespoons red wine vinegar
- 1 pinch salt and ground black pepper to taste
- 6 ounces watercress
- 1/4 cup orange segments

Preheat your oven to the desired temperature of 350 degrees F (175 degrees C).

Arrange bread cubes in a single layer on a baking sheet lined with parchment paper and lightly anoint them with 2 tablespoons of olive oil.

Bake the bread cubes in a preheated oven until they achieve a toasted yet still tender texture, approximately 8 minutes. Remove the bread from the oven and allow it to relax for about 10 minutes.

In the meantime, heat a medium-sized frying pan over moderate heat. Roast almonds in the hot pan, stirring constantly, until they turn a golden hue, roughly 5 minutes. Set the almonds aside once done.

Add another tablespoon of olive oil to the same frying pan and heat it over moderate heat. Introduce shallot into the pan and cook, stirring frequently, for 2 minutes. Transfer the mixture to a small container; whisk in 1/2 cup of olive oil and red wine vinegar until the ingredients are well combined for a vinaigrette. Season with salt and pepper to taste.

Mix toasted bread, watercress, almonds, and orange segments together in a large serving dish. Add the vinaigrette to the mixture and toss everything together until it is evenly coated. Season with salt and pepper as desired. Serve the salad immediately.
