- 1 teaspoon vanilla extract

- 1/4 teaspoon salt
- 1 egg
- 1 recipe pastry for a 9 inch single crust pie
- 1 egg
- 2 tablespoons dark corn syrup
- 2 tablespoons brown sugar, packed
- 1 tablespoon butter, melted
- 1/2 teaspoon maple flavored extract
- 1 cup chopped pecans

Boil a whole sweet potato in its skin for approximately 40 to 50 minutes, or until it reaches the desired level of doneness.

Once cooked, submerge the sweet potato in an ice bath to stop the cooking process, then carefully remove the skin.

Place the cooked sweet potato in a large mixing bowl and mash it with a fork until it's broken apart into smaller pieces.

Melt 1/4 cup of butter or margarine in the microwave and pour it into the bowl with the mashed sweet potatoes.

Using an electric mixer, beat the mixture until it's smooth and well combined.

Mix in sweetened condensed milk, ground cinnamon, grated orange peel, vanilla extract, ground nutmeg, salt, and 1 egg until everything is fully incorporated.

Pour the sweet potato mixture into an unbaked pie crust and smooth out the top.

Bake the pie in a preheated oven at 425 degrees F (220 degrees C) for 20 minutes.

After removing the pie from the oven, reduce the temperature to 350 degrees F (175 degrees C) and continue baking.

While the pie is baking, prepare the topping by mixing together 1 egg, corn syrup, brown sugar, 1 tablespoon of melted butter, maple flavoring, and chopped pecans.
