Citrus Rainbow Cake

  • 2 1/4 cups white sugar
  • 4 eggs, room temperature
  • 1 1/2 cups milk
  • 2 teaspoons vanilla extract
  • 2 teaspoons grated lemon zest
  • 2 teaspoons grated orange zest
  • 2 teaspoons grated lime zest
  • 2 drops yellow food coloring
  • 2 drops orange food coloring
  • 2 drops green food coloring
  • 1 recipe Lemon Custard Filling
  • 1 recipe Orange Cream Frosting

Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius.

Next, take a pastry brush and grease three 9-inch round cake pans thoroughly. Then, dust them lightly with flour to prevent sticking.

In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt. Set this mixture aside for now.

In a large mixing bowl, use an electric mixer to cream together 1 cup of shortening and 1 cup of granulated sugar until they become light, fluffy, and well combined.

Crack in 2 eggs one at a time, mixing each egg thoroughly until it's fully incorporated; then stir in 1 teaspoon of vanilla extract.

Gradually add the flour mixture to the wet ingredients, alternating with 1 cup of milk until just combined.
