Citrus Pizzelle

  • 1 teaspoon baking powder
  • 3 eggs, at room temperature
  • 3/4 cup white sugar
  • 1/2 cup butter, melted
  • 1 tablespoon orange extract
  • 2 teaspoons triple sec (orange-flavored liqueur)
  • 8 drops yellow food coloring
  • 4 drops red food coloring
  • 2 teaspoons finely grated orange zest

Combine the flour and baking powder in a small bowl, whisking them together until well incorporated.

Using an electric mixer on medium speed, beat the eggs in a large bowl until they become light and fluffy. Gradually add sugar to the eggs, continuing to beat until the mixture thickens and becomes smooth. Next, gradually add melted butter to the eggs, beating continuously until well combined. Introduce orange extract and triple sec into the mixture, followed by a few drops of yellow and red food coloring. Finally, carefully add the sifted flour and baking powder to the mixture, stirring until it becomes stiff and smooth. Fold in some grated orange zest for added flavor.

To prepare the pizzelle baker, grease it according to the manufacturer's instructions and preheat it to the recommended temperature.

Using a small ice cream scoop or tablespoon cookie scoop, drop spoonfuls of batter onto the preheated pizzelle baker. Bake for 30 to 40 seconds, or until the desired color is achieved. Remove the pizzelles from the baker and transfer them to a cooling rack to cool completely.
