  • 1 (3 ounce) package instant lemon pudding mix
  • 3/4 cup orange juice
  • 1/2 cup vegetable oil
  • 4 eggs
  • 1 teaspoon lemon extract
  • 2/3 cup white sugar
  • 1/3 cup orange juice
  • 1/4 cup unsalted butter

Preheat your oven to 325 degrees Fahrenheit, or 165 degrees Celsius. Next, take some butter and rub it all over a 10-inch Bundt pan to prevent the cake from sticking.

Now, let's start making the cake. In a large mixing bowl, combine the cake mix and pudding mix. Create a small indentation in the center of the mixture and pour in some freshly squeezed orange juice, followed by oil, eggs, and lemon extract. Using a low-speed electric mixer, gently blend the ingredients together until they're well combined. Make sure to scrape down the sides of the bowl, then increase the speed and beat for 4 minutes.

Pour the cake batter into your prepared Bundt pan and pop it into a preheated oven for 50 to 60 minutes. Once the cake is done, let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely, taking around 20 more minutes.
