  • 2/3 cup couscous
  • 1 (2 ounce) jar sliced pimento peppers, drained
  • 2 tablespoons toasted pine nuts
  • 2 tablespoons chopped fresh parsley

Combine the chicken broth, freshly squeezed lemon juice, grated lemon zest, and melted butter in a saucepan over high heat; bring the mixture to a rolling boil. Add salt and stir until it's fully incorporated. Then, add the couscous to the saucepan and mix well until it's evenly coated with the liquid. Cover the saucepan, take it off the heat source, and let the couscous sit in the hot liquid for about 5 minutes, allowing it to absorb most of the liquid.
