Preheat a large, heavy skillet over medium heat by warming the oil. Sear pork chops until they achieve an even, golden-brown color on both sides; take them out of the skillet. Add orange juice, soy sauce, and sugar to the skillet, stirring to combine. Simmer for 2 minutes, using a spatula to scrape the bottom of the pan and release any browned bits. In a separate, small bowl, whisk together water and cornstarch to create a slurry, then stir it into the sauce. Return the pork chops to the skillet and cook for a short time, or until the sauce has thickened and the meat is heated through.
