  • 1 cup white sugar
  • 1/2 cup margarine, softened
  • 1 large egg
  • 1 cup grated zucchini
  • 1 cup raisins

Combine dry ingredients, including flour, baking soda, cinnamon, cloves, and salt, in a medium-sized container.

Mix sugar and butter together using an electric mixer in a large bowl until they form a smooth, even consistency, taking about 2 to 3 minutes. Introduce the egg into this mixture and then incorporate zucchini, blending everything well. Combine the dry ingredients with the wet mixture until they are fully incorporated and smooth. Add raisins to this dough and store it in the refrigerator for at least 1 hour or overnight.

When you're ready to bake, preheat your oven to 375 degrees F (190 degrees C). Grease two cookie trays.

Scoop out small amounts of the chilled dough, about the size of a teaspoon, and place them 2 inches apart on the prepared cookie trays.
