- 1 1/2 teaspoons baking powder
- 1/2 teaspoon fine salt
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon freshly grated nutmeg
- 8 ounces fresh ricotta cheese, well drained
- 1/2 cup pumpkin puree
- 2 tablespoons pumpkin puree
- 1/4 cup white sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- Canola oil, for frying

Combine the dry ingredients of flour, baking powder, salt, cinnamon, and nutmeg in a bowl, stirring until well blended.

In another mixing bowl, combine the wet ingredients of ricotta, pumpkin puree, sugar, eggs, and vanilla extract. Whisk until the mixture is smooth and free of lumps.

Gradually add the dry ingredients to the wet ingredients, stirring until a loose batter forms.

Heat oil in a deep-frying device or large saucepan to 375 degrees Fahrenheit (190 degrees Celsius).

Using a spoon, scoop out a generous tablespoon of dough and then carefully place it into the hot oil using a second spoon. Fry in small batches for approximately 1 minute. If the zeppole do not turn over on their own after 1 minute, use a strainer to gently flip each one and cook for an additional 1 minute on the other side, until browned. Remove with a strainer and drain excess oil on a cooling rack.
