Cinnamon Pear Pie
Ingredients
  • 1 (14.1 ounce) package double-crust pie pastry, thawed
  • 1/2 cup white sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon lemon zest
  • 1/4 teaspoon salt
  • 5 cups peeled and sliced pears
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
Instructions
1
Begin by preheating the oven to a high temperature of 450 degrees Fahrenheit, or 230 degrees Celsius. Place a baking sheet on the lowest oven rack to ensure even cooking.
2
Next, position a 9-inch pie plate on the baking sheet and cover its bottom and sides with one of the provided pie crusts. Set the second pie crust aside for now.
3
In a separate mixing bowl, blend together sugar, flour, cinnamon, lemon zest, and salt until well combined.
4
Arrange the pear slices in a layered pattern within the prepared pie crust, sprinkling the sugar mixture over each layer. Dot the top of each layer with butter and drizzle with lemon juice.
5
To assemble the pie, moisten the rim of the bottom crust with a small amount of water. Then, cover the filling with the remaining pie crust and press the edges together to seal the pie. Trim off any excess pastry and cut several slits in the top crust to allow steam to escape.
6
Place the pie on the preheated baking sheet and bake for 10 minutes. After this initial baking time, reduce the oven temperature to a moderate level of 350 degrees Fahrenheit, or 175 degrees Celsius. Continue baking the pie until its crust is golden brown and the filling is bubbly, requiring an additional 35 to 40 minutes of cooking time.
