Cinnamon Lime Chicken Fajitas
Ingredients
  • 4 boneless, skinless chicken breast halves
  • 1 tablespoon ground cinnamon
  • salt and pepper to taste
  • 2 large baking potatoes, peeled and cubed
  • 1/4 cup canola oil
  • 1 large yellow onion, chopped
  • 1 large clove garlic, peeled and minced
  • 1 tablespoon chopped jalapeno peppers
  • 1 lime, juiced
  • 12 (6 inch) corn tortillas, warmed
Instructions
1
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) for optimal results.
2
Arrange the potatoes in a shallow baking dish, and lightly coat them with approximately half of the oil available. Add a pinch of salt to enhance flavor, then place the dish in the oven.
3
Allow the potatoes to cook for 30 to 40 minutes, or until they reach a tender state. This indicates that they are ready to be served.
4
Simultaneously, prepare the chicken by sprinkling it with cinnamon, salt, and pepper. Place the seasoned chicken in a separate baking dish, and bake it for 30 minutes in the preheated oven. The chicken is done when it reaches a safe internal temperature and no longer exhibits pink coloration, with juices flowing freely.
5
Once the chicken has finished cooking, remove it from the oven and let it cool down. Then, shred the cooked chicken into bite-sized pieces.
6
In a separate skillet, heat the remaining oil over medium heat. Add sliced onions and minced garlic to the skillet, and sauté them until they become tender.
7
Mix the shredded chicken with diced jalapeno, a squeeze of lime juice, and the cooked onions and garlic. Stir until everything is well combined and heated through.
8
Serve the chicken and potatoes in warmed tortillas, allowing each component to complement the others.
