Cinnamon French Toast Pancakes
Ingredients
  • 2 teaspoons vegetable oil
  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 pinch ground nutmeg, or to taste
  • 1 pinch ground cinnamon, or to taste
  • 1 cup milk
  • 1 egg
  • 2 tablespoons vegetable oil
  • 1 dash vanilla extract, or to taste

Preheat a skillet or griddle over medium-high heat by heating 2 teaspoons of oil in it.

Combine the flour, sugar, baking powder, baking soda, salt, nutmeg, and cinnamon in a bowl; create a central depression by pushing the dry ingredients to one side.

In another bowl, whisk together the milk, egg, 2 tablespoons of oil, and vanilla extract until well combined.

Pour the wet ingredients into the depression in the dry ingredients mixture, and gently fold until a smooth batter forms.

Using a spoon, drop approximately 1/4 cup of the batter onto the preheated skillet or griddle.

Cook for 3 to 4 minutes, or until bubbles form and the edges of the pancake are dry.

Flip the pancake over and cook for an additional 2 to 3 minutes, or until it is browned on the other side.
