Cinnamon Fig Jam
Ingredients
  • 1 1/2 pounds ripe figs, chopped
  • 1/3 cup water
  • 1/4 cup coconut sugar
  • 1 cinnamon stick
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon freshly ground mixed peppercorns
  • 1/2 lemon, juiced
  • 2/3 (.25 ounce) packet agar-agar powder
Instructions
1
Combine figs, water, sugar, cinnamon sticks, allspice, and peppercorns in a large saucepan over medium-high heat.
2
Bring the mixture to a rolling boil, stirring occasionally, until the figs start to break down and become syrupy, approximately 10 minutes.
3
Gradually decrease the heat and maintain a gentle simmer, stirring frequently to facilitate the breakdown of the figs, until the jam reaches a slightly thickened consistency, roughly 25 minutes total.
4
Meanwhile, whisk together lemon juice and agar-agar in a separate container.
5
Set the mixture aside to allow it to thicken and gel, which will take some time.
6
Once the jam has finished simmering, remove it from the heat source and carefully lift out the cinnamon sticks.
7
Add the lemon mixture to the jam and stir until well combined.
8
Allow the mixture to cool slightly before transferring it to a clean, sterilized pint jar with a tight-fitting lid.
9
Finally, refrigerate the jam until it is chilled and set.
