Combine figs, water, sugar, cinnamon sticks, allspice, and peppercorns in a large saucepan over medium-high heat.

Bring the mixture to a rolling boil, stirring occasionally, until the figs start to break down and become syrupy, approximately 10 minutes.

Gradually decrease the heat and maintain a gentle simmer, stirring frequently to facilitate the breakdown of the figs, until the jam reaches a slightly thickened consistency, roughly 25 minutes total.

Meanwhile, whisk together lemon juice and agar-agar in a separate container.

Set the mixture aside to allow it to thicken and gel, which will take some time.

Once the jam has finished simmering, remove it from the heat source and carefully lift out the cinnamon sticks.
