- 4 large croissants, halved horizontally, left out overnight
- 3 large eggs
- 1/2 cup half-and-half
- 1 tablespoon white sugar
- 2 teaspoons vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 pinch ground nutmeg
- 2 tablespoons unsalted butter

Preheat your oven to a temperature of 200 degrees Fahrenheit (or equivalently, 95 degrees Celsius).

Combine eggs, half-and-half, sugar, vanilla, cinnamon, salt, and nutmeg in a shallow bowl using a whisk to thoroughly mix the ingredients together.

Dip each half of the croissant into the egg mixture, one at a time, flipping it and gently pressing down until well-coated.

In a large skillet over medium heat, melt butter until it's smooth and then add four croissant halves, cut-side down. Cook until browned on both sides, flipping them once and cooking for 2 to 3 minutes per side. Transfer the cooked croissants to the oven to keep them warm while you prepare the remaining ones.
