Cinnamon Brown Sugar Rice Pudding
Ingredients
  • 2 cups water
  • 2 cups instant white rice (such as MinuteĀ®)
  • 1/2 teaspoon butter
  • 1/8 teaspoon salt
  • 1 cup milk
  • 2 tablespoons brown sugar, or to taste
  • 1 teaspoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon, or more to taste
Instructions
1
Heat water in a saucepan until it reaches its boiling point. Then, combine the rice, butter, and salt in the saucepan and stir until the butter has fully incorporated into the mixture. Next, cover the saucepan with a lid and take it off the heat source to prevent further cooking. Allow the mixture to sit for 5 minutes, allowing the water to be absorbed by the rice.
2
In a separate bowl, whisk together milk, brown sugar, cornstarch, and vanilla extract until well combined. Then, gradually add this mixture to the cooked rice in the saucepan and continue stirring over medium heat. Keep cooking until the rice has reached a consistency similar to that of loose oatmeal, which should take about 5 minutes.
3
Spoon the cooked pudding mixture into individual serving bowls and finish by sprinkling a pinch of cinnamon over the top for added flavor and texture.
