Cinnamon Apple Pancake
Ingredients
  • 4 eggs
  • 1/2 cup unbleached all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon ground nutmeg
  • 1/4 cup unsalted butter
  • 1/2 cup white sugar, divided
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 large tart apple - peeled, cored and sliced
Instructions
1
Combine eggs, flour, sugar, baking powder, and salt in a large bowl; gradually blend in milk, stirring continuously. Introduce vanilla, melted butter, and nutmeg to the mixture, allowing it to rest for 30 minutes or overnight.
2
Heat your oven to 425 degrees F (220 degrees C). Melt butter in a 10-inch oven-proof skillet, ensuring the butter covers all surfaces of the pan. Mix sugar, cinnamon, and nutmeg in a small bowl; sprinkle this mixture evenly over the melted butter. Arrange apple slices along the edges of the pan, followed by a layer of sugar on top of the apples. Place the skillet over medium-high heat until the mixture starts to bubble, then carefully pour the batter mixture over the apples.
3
Bake the pancake in the preheated oven for 15 minutes. Lower the heat to 375 degrees F (190 degrees C) and continue baking for an additional 10 minutes. Transfer the pancake to a serving platter, cut into wedges, and serve
