Ingredients
- 1/4 cup quick-cooking oats
- 1 tablespoon brown sugar
- 1 tablespoon melted butter
- 1/4 teaspoon ground cinnamon
- 1 1/2 cups quick-cooking oats
- 1 1/2 cups all-purpose flour
- 1/2 cup brown sugar
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
- 1 apple - peeled, cored, and chopped
Instructions
1
Preheat your oven to the desired temperature of 400 degrees Fahrenheit, or equivalently 200 degrees Celsius.
2
Next, prepare your muffin tin by either greasing it with cooking spray or lining it with paper cups to prevent the muffins from sticking.
3
Meanwhile, create the topping mixture by combining oats, brown sugar, melted butter, and a pinch of cinnamon in a small bowl; set it aside for later use.
4
In another large bowl, combine oats, flour, brown sugar, cinnamon, baking powder, baking soda, and salt to form a dry mixture.
5
In a separate medium-sized bowl, whisk together applesauce, milk, oil, egg, and vanilla extract until well combined.
6
Gradually stir the applesauce mixture into the dry mixture until all ingredients are fully incorporated and moistened. Fold in chopped apple to add texture.
7
Spoon the batter into each muffin cup about 2/3 full, followed by an even sprinkling of the oat topping mixture over each muffin.
8
Place the muffins in the preheated oven and bake until a toothpick inserted near the center comes out clean, taking approximately 15 minutes to achieve the desired result.
