  • 1 bunch fresh cilantro
  • 1/2 cup walnuts or pecans
  • 1/4 cup grated Parmesan cheese
  • 5 cloves garlic, minced
  • 1 tablespoon white wine vinegar
  • 1/2 teaspoon cayenne pepper
  • salt to taste
  • 1/2 cup olive oil

Boil a substantial container of salted water until it reaches its maximum temperature. Prepare pasta in the boiling salted water until it becomes soft yet retains a slight firmness when bitten into, approximately 8 to 10 minutes; remove from the water thoroughly.

Combine cilantro, nuts, Parmesan, garlic, vinegar, cayenne pepper, and salt in a food processor or blender. Introduce 1/4 cup of olive oil into the mixture and blend until everything is well incorporated. Continue adding olive oil until the pesto reaches your preferred level of thickness.

Transfer the pesto mixture to a small saucepan and heat it over extremely low temperatures, stirring constantly, until the pesto is warmed up and starts to bubble gently. Pour the warm pesto over cooked pasta and mix it in thoroughly.
