Cilantro Pesto Pasta with Barley
Ingredients
  • 1 1/2 cups water
  • 1/2 cup pearl barley
  • 8 ounces uncooked orecchiette pasta
  • 1 bunch cilantro
  • 1/2 bunch green onions
  • 1 cup grape tomatoes, halved
  • 1/2 cup vegetable broth
  • 1/4 cup Parmesan cheese
  • 1 cup torn arugula leaves
  • salt and pepper to taste

Firstly, place the 1 1/2 cups of water in a saucepan and put it on high heat, causing the water to reach its boiling point. Next, add the barley into the saucepan and stir it well. After that, decrease the heat to a lower level, cover the saucepan with a lid, and let it simmer for 30 minutes.

Subsequently, fill a large pot with water that has been lightly seasoned with salt and put it on high heat to reach its boiling point. Once the water has reached a boil, add the orecchiette pasta into it and cook for 8 to 10 minutes or until the pasta reaches the desired level of doneness, which is 'al dente'. Remove the pasta from the water with a colander and drain it.

In addition, take the cilantro, green onions, and 1/2 of the tomatoes and finely chop them using a food processor. Combine this chopped mixture with the broth and Parmesan cheese, and continue processing until everything is well combined.

Lastly, place all the ingredients including the cooked pasta, barley, chopped cilantro mixture, remaining tomatoes, and arugula in a large bowl. Season the dish with salt and pepper to taste, and serve it immediately.
