Ingredients
- 1/2 cup dark Mexican beer
- 1/4 cup avocado oil
- 1/2 white onion, cut into large wedges
- 1 cup fresh cilantro leaves
- salt and pepper to taste
- 2 pounds beef skirt steak

Combine the ingredients in a blender, starting with beer, then oil, followed by two onions and two handfuls of cilantro. Add salt and pepper to taste. Blend the mixture until it forms a smooth marinade.

Next, place the steak in a large, resealable container and pour the cilantro marinade over it. Seal the bag and give it a vigorous shake to ensure the meat is evenly coated with the marinade. Cover the bag and refrigerate it for at least 8 hours or overnight.

Before grilling, preheat the outdoor grill to medium-high heat. Using a paper towel dipped in avocado oil, lightly brush the grill grates to prevent sticking. Place the steak on the grill and cook for approximately 3 minutes per side, flipping it once to achieve a medium-rare doneness.
