  • 3 quarts cold water, or as needed to cover

Combine the softened cream cheese in a bowl until it's well blended; mix in chopped cilantro, freshly squeezed lime juice, and a pinch of cayenne pepper until they're perfectly incorporated. Cover the mixture and refrigerate for about an hour to allow the flavors to meld together.

Next, carefully remove the outer layers from the corn cobs, starting at the top and leaving the husks intact at the bottom of each ear. Remove any remaining corn silk from the ears and then reattach the husks over the kernels, ensuring they're securely in place. Submerge the corn cobs in a large bowl filled with cold water, allowing them to soak thoroughly for around 20 minutes.

Prepare the grill by preheating it to a medium heat and lightly brushing the grates with oil.

Once the grill is ready, place the corn cobs in their husks on the hot grates and close the lid to grill covered until the husks are nicely charred and the corn kernels are tender, taking about 20 to 25 minutes and flipping them occasionally.
