- 4 cups water
- 2 cups brown rice
- 1 lime, juiced
- 1 teaspoon minced garlic
- 1 teaspoon extra-virgin olive oil
- 1 teaspoon sea salt
- 1/2 cup chopped fresh cilantro

Begin by heating water and brown rice in a saucepan over high heat, stirring occasionally.

Once the mixture reaches a rolling boil, decrease the heat to a lower setting and cover the saucepan with a lid.

Continue to cook for 30-45 minutes, or until the rice is fully tender and all liquid has been absorbed.

Transfer the cooked rice to a large serving dish, allowing it to cool down slightly for 5-7 minutes.

In the meantime, prepare a dressing by whisking together freshly squeezed lime juice, minced garlic, olive oil, and salt in a small bowl.
