Combine fresh strawberries, granulated sugar, white vinegar, and a pinch of salt in a substantial saucepan. Place the mixture over high heat, allowing it to reach a vigorous boil, and cook with constant stirring for 15 to 20 minutes, or until the temperature of the mixture has reached a high mark of 220 degrees F (105 degrees C).

Transfer the jam to clean, sterilized containers with tight-fitting lids, leaving a small gap of 1/2 inch between the jam and the top of the container. Secure the lids firmly, ensuring a tight seal, and process the jars for 10 minutes in boiling water. Once the seal is broken, store the jam in the refrigerator to preserve its quality.
