Chourico and Green Bean Stew
Ingredients
  • 1 (16 ounce) package chourico, cut into small pieces
  • 1 small onion, chopped
  • 1 clove garlic, chopped
  • 1 (15 ounce) can canned tomato sauce
  • 6 cups water
  • 2 small potatoes, diced
  • 2 teaspoons red pepper flakes
  • 1 dash paprika
  • 2 (15 ounce) cans green beans, drained

Preheat a heavy-bottomed pot with a tight-fitting lid over medium-high heat. Sear sliced chourico, chopped onion and minced garlic until the onion becomes translucent. Combine the cooked ingredients with a can of crushed tomatoes, water and diced potatoes. Add salt and pepper to taste, specifically the spicy red pepper flakes and smoky paprika. Bring the mixture to a rolling boil, then decrease the heat and let it simmer for 25-30 minutes or until the potatoes are tender. Introduce steamed green beans into the pot and continue to cook for an additional 5-10 minutes, or until heated through.
