- 8 flour tortillas, warmed

Combine the spicy Spanish sausage, chorizo, and sliced onion in a large skillet over medium heat. Allow these ingredients to meld together as they cook, stirring occasionally, until the onion becomes translucent and soft, approximately 5 minutes have passed. Next, add diced potatoes, water, and minced garlic to the skillet; mix everything together thoroughly. Cover the skillet with a lid and lower the heat to medium-low, continuing to cook and stir every 10 minutes or so until the potatoes are tender and easily pierced with a fork, roughly 25 minutes have elapsed. Finally, remove the skillet from the heat and divide its contents into warm flour or corn tortillas.
