Ingredients
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon baking powder
- 3 eggs
- 2 cups white sugar
- 2 cups grated zucchini
- 1 cup vegetable oil
- 1 cup chopped walnuts
- 1 cup semisweet chocolate chips
- 1 tablespoon orange zest
- 2 teaspoons vanilla extract
Instructions
1
Heat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius.
2
Prepare two 9x5-inch loaf pans by spraying them with non-stick cooking spray.
3
Mix together the dry ingredients, including flour, baking soda, salt, nutmeg, cinnamon, and baking powder, in a bowl until well combined.
4
In a separate mixing bowl, use an electric mixer to beat the eggs until they become light and airy. Gradually add sugar and continue beating until everything is fully incorporated.
5
Add the zucchini, oil, walnuts, chocolate chips, orange zest, and vanilla to the mixing bowl. Stir everything together until it's well blended.
6
Add the flour mixture to the mixing bowl and blend until just combined. Divide the batter evenly between the prepared loaf pans.
7
Bake the loaves in a preheated oven for approximately 50 minutes, or until a toothpick inserted into the center comes out clean.
8
Once the loaves are done baking, let them cool slightly before carefully removing them from the pans.
9
Place the loaves in the refrigerator to chill for a period of time before slicing.
