Chocolate Creme Brulee
Ingredients
  • 1 quart heavy cream
  • 1/2 cup white sugar
  • 2 teaspoons vanilla extract
  • 9 egg yolks
  • 1/2 cup chocolate chips
  • 2 tablespoons white sugar, or as needed
Instructions
1
Begin by preheating your oven to a moderate temperature of 325 degrees F (165 degrees C). Next, position six 6-ounce ramekins on a baking sheet to prepare for the next steps.
2
In a saucepan, combine heavy cream, granulated sugar, and a hint of vanilla extract. Place the saucepan over medium heat and stir until the sugar dissolves, then continue to warm it until it starts to simmer. Remove from heat.
3
Then, take a few egg yolks and gently whisk them into a large bowl. Gradually pour in the hot cream mixture, two tablespoons at a time, until you've added roughly a cup of cream to the egg yolks. At this point, pour in any remaining cream and whisk until it's smooth.
4
Mix the chocolate chips into the egg yolk mixture, then set it aside for about 5 minutes to allow the flavors to meld.
5
After that, whisk the mixture until the chocolate is fully incorporated and evenly distributed. Pour the mixture into the prepared ramekins.
6
Next, place the ramekins in a preheated oven and bake until the center is just set, taking about 15 to 20 minutes.
7
Remove the ramekins from the oven and let them cool for approximately 45 minutes. Then, transfer them to the refrigerator to chill until they're cold, which should take around 6 hours.
8
Before serving, ensure the oven rack is positioned in its highest spot. Increase the oven temperature to Broil.
9
Sprinkle a generous amount of sugar onto each creme brulee, making sure they're evenly coated. Gently pour off any excess sugar and place the ramekins onto a baking sheet.
10
Finally, place the ramekins under the broiler until the sugar bubbles and turns a light caramel brown. Serve immediately.
