Ingredients
- 3 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 2 cups white sugar
- 1 cup vegetable oil
- 3 large eggs
- 2 cups grated zucchini
- 1/2 cup sour cream
- 1 cup semisweet chocolate chips
Instructions
1
Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius.
2
Next, lubricate two 9x5-inch loaf pans with a small amount of cooking oil to prevent sticking.
3
In a separate bowl, combine 2 cups of all-purpose flour, 1 teaspoon of ground cinnamon, 1 teaspoon of baking powder, and 1/2 teaspoon of baking soda.
4
Meanwhile, in a large mixing bowl, use an electric mixer to cream together 1 cup of granulated sugar, 1/2 cup of vegetable oil, and 2 large eggs until they are thoroughly incorporated.
5
Add the grated zucchini to the mixing bowl and blend until it's evenly distributed. Then, incorporate 1/2 cup of sour cream into the mixture.
6
Mix in the dry ingredients until they are fully incorporated and the batter is smooth. Finally, fold in 1 cup of chocolate chips.
7
Pour the prepared batter into the two loaf pans and bake them in a preheated oven for 1 1/2 hours, or until a toothpick inserted into the center of each loaf comes out clean.
8
Remove the loaves from the oven and let them cool on a wire rack to allow the flavors to mature.
