Ingredients
- 2/3 cup white sugar
- 1/2 cup butter, softened
- 1/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 2 eggs
- 1 3/4 cups all-purpose flour
- 4 (1 ounce) squares white chocolate, chopped
- 3/4 cup semisweet chocolate chips
Instructions
1
Combine sugar and butter in a large mixing bowl using an electric mixer until they achieve a light and fluffy consistency. Gradually incorporate cocoa powder into the mixture, followed by baking powder, blending everything together for 2 minutes. Introduce eggs one at a time into the mixture, ensuring each egg is fully incorporated before adding the next. Using your hands, gently fold in flour to create a cohesive dough. Mix in white chocolate and chocolate chips into the dough, covering it with plastic wrap to chill for approximately 10 minutes.
2
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a cookie sheet with butter or cooking spray to prevent cookies from sticking. Divide the dough into two equal portions and shape each portion into a 9-inch long log. Place the logs on the prepared cookie sheet, leaving about 4 inches of space between each log to allow for even baking. Gently flatten the logs slightly.
3
Bake the cookies in a preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of a cookie comes out clean. Remove the cookies from the oven and let them cool on the cookie sheet for 5 minutes before transferring them to a wire rack to cool completely, allowing them to set for about an hour.
4
Preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius). Cut each cookie log into 1/2-inch wide diagonal slices. Arrange the slices on an ungreased cookie sheet, leaving space between each slice to allow for even baking. Bake the slices in a preheated oven for 9 minutes, then turn them over and bake for an additional 7 to 9 minutes.
