Ingredients
- 1/2 cup butter
- 2 tablespoons white sugar
- 2 tablespoons golden syrup
- 4 teaspoons cocoa powder
- 1 (8 ounce) package rich tea biscuits, crushed
- 1/4 cup raisins, or to taste
- 7 ounces milk chocolate chips
- 7 ounces dark chocolate chips
Instructions
1
Combine the softened butter, granulated sugar, and golden syrup in a saucepan over low-medium heat; blend the ingredients together until they form a uniform mixture, 2 to 4 minutes. Gradually incorporate the dry ingredients into the saucepan and stir until well combined, 2 to 4 minutes. Introduce the crushed biscuits and plump raisins into the mixture, stirring until they are evenly distributed.
2
Pour the chocolatey mixture onto a prepared 8 x 12-inch baking tray; flatten it to an even layer.
3
In a separate heatproof container, melt the milk chocolate and dark chocolate over simmering water in a double boiler; stir constantly to prevent scorching, 3 to 4 minutes. Scrape down the sides of the container with a rubber spatula to ensure all ingredients are well incorporated, 3 to 4 minutes.
4
Pour the smooth chocolate mixture over the base in the jelly roll pan.
5
Place the assembled dessert in the refrigerator to allow it to set, approximately 1 hour.
6
Divide the solidified dessert into 20 equal pieces.
