Chocolate Bacon Cupcakes

  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 cup cold, strong, brewed coffee
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tablespoon unsweetened cocoa powder, for dusting

Preheat your oven to a high temperature of 375 degrees Fahrenheit, or 190 degrees Celsius.

Prepare your baking space by placing 24 paper liners into two large cupcake molds, each with 12 individual compartments. Next, lightly spray these liners with a non-stick cooking spray to prevent sticking.

In a large and deep skillet, cook the bacon over medium-high heat, stirring occasionally until it reaches an even brown color. This should take around 10 minutes. Remove the cooked bacon from heat and let it drain on paper towels before crumbling it into small pieces. Set this aside for later use.

In a separate bowl, combine the following dry ingredients: flour, sugar, 3/4 cup of cocoa powder, baking soda, baking powder, and salt. Mix these together until well combined.

Make a small indentation in the center of this bowl and pour in 1 cup of coffee, followed by 1/2 cup of buttermilk, 1/4 cup of oil, and 2 eggs. Use a spoon to gently stir these ingredients together until they are just blended.

Mix in 3/4 of the cooked bacon that you set aside earlier, reserving the remaining 1/4 for garnish.

Spoon the batter evenly into each of the prepared cupcake molds.
