- 2 pounds very small red potatoes, scrubbed
- 3 tablespoons unsalted butter, softened
- 3 tablespoons finely chopped fresh chives
- salt and ground black pepper to taste

Fill a large pot with potatoes and cover them with salted water; heat it up until the water reaches boiling point. Lower the heat to a moderate level and let it simmer for 10 to 15 minutes, or until the potatoes are tender. Remove from heat and let sit for a short while, 1 to 2 minutes, until it's cool enough to handle.
