Ingredients
- 1/4 cup chopped fresh cilantro
- 3 canned chipotle chiles in adobo sauce, finely chopped
- 2 large cloves garlic, minced
- 3 tablespoons honey
- 2 tablespoons lime juice
- 1 tablespoon soy sauce
- 2 teaspoons ground cumin
- 2 (10 ounce) pork tenderloins, trimmed of fat
Instructions
1
Combine the fragrant herb cilantro, spicy chiles, pungent garlic, sweet honey, tangy lime juice, savory soy sauce, and earthy cumin in a bowl. Transfer the mixture to a resealable plastic bag, then add the tenderloins and coat them evenly with the marinade. Remove as much air as possible from the bag before sealing it tightly. Refrigerate for 6 hours to allow the flavors to meld.
2
Next, remove the tenderloins from the marinade and gently shake off any excess. Discard the remaining marinade, which has done its job of infusing flavor into the meat. Bring the pork tenderloins to room temperature, allowing them to soften and become more receptive to cooking. This process should take around 20-30 minutes.
3
While the pork is warming up, prepare your outdoor grill for high heat. Lightly brush the grill grates with oil to prevent sticking and ensure a smooth cooking experience.
4
Grill the tenderloins on the preheated grill for 10 minutes per side, or until they reach a slightly pink center. To check the internal temperature, insert an instant-read thermometer into the thickest part of the meat. The ideal reading should be at least 145 degrees F (63 degrees C), indicating that the pork is cooked to a safe and delicious level.
