  • 1 chipotle chile pepper, minced
  • 1/2 teaspoon sea salt
  • 1 pound skirt steak

Combine orange juice, cumin, chile pepper, and sea salt in a bowl and mix until well combined. Transfer the mixture to a resealable plastic bag, then add the steak and coat evenly with the marinade. Remove any excess air from the bag and seal it tightly. Refrigerate for 24 hours to allow the flavors to penetrate.

Prepare the grill by preheating it over medium-high heat. Lightly brush the grill grates with oil to prevent sticking. Remove the steak from its marinade, discarding the used marinade in the process.

Cook the steak over medium-high heat for 3 to 4 minutes per side, or until it reaches a firm texture and is reddish-pink in color with a juicy interior. Use an instant-read thermometer to check the internal temperature, aiming for 130 degrees F (54 degrees C) in the center of the steak.
