  • 2 tablespoons Shaoxing cooking wine
  • 1 tablespoon hoisin sauce
  • 1 tablespoon pureed kiwi
  • 1 tablespoon Chinese dark soy sauce
  • 1 tablespoon Thai chile sauce
  • 2 cloves garlic, grated
  • 2 teaspoons oyster sauce
  • 1/2 teaspoon Chinese five-spice powder
  • 1 1/2 pounds pork belly, skin removed

Combine honey, cooking wine, hoisin sauce, diced kiwi, dark soy sauce, chile sauce, minced garlic, oyster sauce, and five-spice powder in a large zip-top container. Add the pork belly and seal the bag, removing as much air as possible.

Place the sealed container on a plate in the refrigerator and marinate the pork belly for at least 2 days, flipping it occasionally to ensure even coverage.

Preheat your oven to 275 degrees F (135 degrees C), positioning the rack in the upper third of the oven for optimal results. Set a wire rack on a rimmed baking sheet.

Carefully place the pork belly on the wire rack, reserving the marinade for later use.

Bake the pork belly in the preheated oven until it reaches an internal temperature of 160 degrees F (71 degrees C), approximately 1 hour. Remove the pork belly from the oven and baste it with the reserved marinade.

Move the rack to the top position of the oven and preheat the broiler. Broil the pork belly until it's dark, glossy, and develops a nice crust on both sides, about 5 minutes per side. Flip the pork belly and baste it with the marinade on the second side, continuing to broil until the second side darkens and starts to blacken.
