Chilled Elderberry Soup
Ingredients
  • 5 ounces elderberries
  • 1 quart water, divided
  • 1 1/2 teaspoons cornstarch
  • 1/2 pound apples - peeled, cored and diced
  • 1 lemon peel
  • white sugar to taste

Combine the elderberries in a cooking vessel with 2 cups of liquid, and heat it up until boiling point is reached. Lower the temperature to a low simmer, and let it cook for 10 minutes. Take it off the heat source, blend the mixture in a food processor until it's smooth and even.

Return the blended mixture to the original pot, and prepare a small container by mixing 1 tablespoon of the puree with cornstarch.

Stir this mixture into the pot to thicken it.

In a separate cooking vessel, bring the apples and remaining 2 cups of liquid to boiling point.

Add a slice of lemon peel into the pot. Lower the temperature to a low simmer, and let it cook for 10 minutes.

Remove the lemon peel from the pot. Mix the blended elderberry puree into the apple mixture, and add sugar to taste.
