Chili Lime Fish Tacos

  • 2 tilapia fillets
  • 3 tablespoons lime juice, divided
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon chili powder
  • 2 tablespoons olive oil
  • 16 (5 inch) corn tortillas
  • 2 cups tomatillo salsa
  • 1 avocado
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh cilantro

Preheat the grill to a medium heat setting and lightly coat the grill grates with a small amount of oil.

Gently massage tilapia fillets with 2 tablespoons of freshly squeezed lime juice and sprinkle with a pinch of salt, black pepper, and a dash of chili powder. Coat both sides of each fillet with a thin layer of olive oil.

Place the tilapia on the preheated grill and cook until it breaks apart easily with a fork, approximately 5 minutes on each side.

Heat tortillas in an ungreased skillet over a medium-high heat setting for 10 to 15 seconds, flipping them halfway through. Repeat the heating process for another 5 to 10 seconds. Fill the warmed tortillas with flaked tilapia and top with a generous helping of tomatillo salsa, sliced avocado, and dollops of sour cream. Garnish with a sprinkle of fresh cilantro and a squeeze of 1 tablespoon of lime juice.
