Chickpea Quinoa Salad

  • 1 cup water
  • 1/2 cup quinoa
  • 1 cup rinsed canned chickpeas
  • 1 cup diced tomatoes
  • 1 cup diced cucumber
  • 1 cup chopped green onions
  • 1 cup chopped fresh parsley
  • 3 tablespoons lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic, minced
  • 2 teaspoons chopped fresh mint
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Begin by placing the water and quinoa in a saucepan over high heat. Bring the mixture to a rolling boil, then gradually decrease the heat to a lower medium setting and cover the pan. Allow the quinoa to become tender, which should take around 15-20 minutes, after which you can remove it from the heat and let it cool down.

To prepare the salad, combine the chickpeas, tomatoes, cucumber, green onions, and parsley in a large serving container. Once the quinoa has cooled, add it to the bowl with the vegetables and stir gently.

Meanwhile, in a small bowl, whisk together the lemon juice, olive oil, garlic, mint, salt, and pepper until well combined. Pour this dressing over the quinoa mixture in the bowl, then toss everything together until it's well coated.
