- 4 skinless, boneless chicken breast halves - cut into 1 inch cubes
- 1/2 cup soy sauce
- 1 onion, sliced lengthwise into eighths
- 1/2 medium head cabbage, coarsely chopped
- 2 carrots, coarsely chopped
- 8 ounces soba noodles, cooked and drained

Combine a generous amount of sesame oil with canola oil in a large skillet and stir-fry for 30 seconds. Next, add minced garlic to the pan and continue to stir-fry for an additional 30 seconds.

Now, add diced chicken breast to the pan and pour in a quarter cup of soy sauce. Stir-fry until the chicken is cooked through, losing its pink coloration and reaching a safe internal temperature of 165 degrees Fahrenheit, approximately 5 minutes.

Remove the mixture from the pan and set it aside to keep warm.

In the same skillet, combine diced onion, shredded cabbage, and sliced carrots. Stir-fry these vegetables until they begin to soften and wilt, typically taking 2 to 3 minutes.

Stir in the remaining soy sauce, cooked noodles, and the chicken mixture from earlier to the pan. Mix everything together until it is well combined.
