- 6 tablespoons vegetable oil
- 8 (6 inch) corn tortillas, coarsely chopped
- 1 onion, chopped
- 1/2 cup chopped fresh cilantro
- 6 cloves garlic, minced
- 1 (29 ounce) can diced tomatoes
- 6 cups chicken broth
- 2 tablespoons ground cumin
- 1 tablespoon chili powder
- 3 bay leaves
- 1 teaspoon salt
- 1/2 teaspoon ground cayenne pepper
- 5 boneless chicken breast halves, cooked

Heat a generous amount of oil in a substantial cooking vessel over a moderately high heat level. Introduce tortillas, onion, cilantro, and garlic to the hot oil mixture and cook for 2-3 minutes.

Next, incorporate diced tomatoes into the pan and bring the mixture to a rolling boil. Introduce chicken broth, cumin, chili powder, and bay leaves into the pan; return to a boil. Then, lower the heat to a moderate level and add salt and cayenne; let it simmer for 30 minutes.

After that, remove the bay leaves from the pan and stir in chicken. Continue cooking until the chicken is thoroughly warmed through.
