Chicken Tortellini Alfredo
Ingredients
  • 2 large skinless, boneless chicken breasts
  • 2 tablespoons olive oil
  • 1 pinch Italian seasoning, or to taste
  • 1 pinch garlic powder, or to taste
  • kosher salt and freshly ground black pepper to taste
  • 1 (12 ounce) package frozen cheese tortellini
  • 1/4 cup butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 1/4 cups freshly grated Parmesan cheese
  • 2 pinches Italian seasoning, or to taste
  • freshly ground black pepper to taste
Instructions
1
Get the grill ready for a medium-high heat setting and lightly grease the grates with oil to prevent sticking.
2
Prepare the chicken by mixing it with a blend of olive oil, dried Italian herbs, minced garlic powder, salt, and black pepper in a bowl until the chicken is evenly coated.
3
Place the chicken on the preheated grill and cook for approximately 6 minutes per side, or until it reaches an internal temperature of at least 165 degrees F (74 degrees C). Remove the chicken from the grill once it's cooked through and transfer it to a plate; cut it into smaller, bite-sized pieces when the chicken has cooled enough to handle safely.
4
Meanwhile, fill a large pot with salted water and bring it to a rolling boil. Add the tortellini and return the pot to a boil, stirring occasionally as it cooks. Continue cooking until the tortellini rise to the surface and the cheese filling is hot, taking around 3 minutes. Drain the tortellini and keep it warm until needed.
5
Create the sauce by melting butter in a medium-sized saucepan over medium heat. Add minced garlic and cook for 2 to 3 minutes, stirring occasionally. Next, add heavy cream and cook for another 3 minutes, allowing the mixture to simmer. Add grated Parmesan cheese and stir until it's fully melted and smooth, taking around 2 to 3 minutes. Add dried Italian herbs and a pinch of black pepper; bring the sauce to a slow simmer. Cook at this temperature for 1 minute, then stir in the cooked tortellini and chicken. Continue cooking until the sauce is heated through, taking around 2 to 3 minutes.
