Ingredients
- 3/4 pound shredded cooked chicken
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TELĀ®), drained
- 1 (4 ounce) can diced green chiles, drained
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon minced garlic
- 1 cup shredded Mexican cheese blend
- 18 (6 inch) corn tortillas
- cooking spray (such as PamĀ®)
Instructions
1
Preheat the oven to its highest temperature setting, which is 350 degrees Fahrenheit or 175 degrees Celsius.
2
In a saucepan over medium heat, combine the chicken, beans, diced tomatoes with green chile peppers, green chile peppers, cumin, chili powder, salt, and garlic. Stir constantly until the mixture is warm throughout, taking around 5 to 10 minutes.
3
Add the Mexican cheese blend to the saucepan and stir until it has melted, requiring about 2 to 3 minutes.
4
Remove the saucepan from the heat source and set it aside.
5
Place a microwave-safe plate on a flat surface, then cover the tortillas with a damp paper towel. Heat them in the microwave for 30 seconds, or until they are warmed through.
6
Spoon approximately 2 to 3 tablespoons of the filling onto the center of each tortilla. Roll the tortillas tightly around the filling and place them seam-side down on a baking sheet.
7
Spray the rolled tortillas with cooking spray to prevent them from sticking during baking.
8
Bake the tortillas in the preheated oven for about 30 minutes, or until they are lightly browned and crispy.
