SERVINGS

Ingredients
- 12 corn taco shells
- 2 tablespoons canola oil
- 1/2 cup diced onion
- 2 cloves garlic, pressed
- 1 pound rotisserie chicken, meat pulled and shredded
- 1 (8 ounce) can tomato sauce
- 1 cup salsa, divided
- 1 (1 ounce) package taco seasoning
- 1 (15 ounce) can vegetarian refried beans
- 2 cups shredded lettuce
- 2 cups shredded Mexican cheese blend
- 1 cup chopped green and red bell peppers
- 1 cup diced tomatoes
Instructions
1
First, preheat your oven to the desired temperature of 350 degrees F (175 degrees C). Next, position taco shells on a baking sheet to prepare them for cooking.
2
In the meantime, heat oil in a large skillet over medium heat and add sliced onion and minced garlic. Continue cooking until the onion becomes soft and transparent, taking around 5 minutes to achieve this.
3
Add diced chicken, tomato sauce, 3 tablespoons of salsa, and taco seasoning to the skillet. Stir everything together well before cooking until heated through, stirring occasionally for 5 to 6 minutes.
4
Simultaneously, place refried beans in a microwave-safe container and stir them. Cover the container and then microwave on high until hot, taking around 3 to 5 minutes.
5
After that, warm taco shells in the preheated oven for 3 to 5 minutes.
6
Now, place warmed taco shells on a serving platter. Arrange remaining salsa, chicken mixture, refried beans, lettuce, Mexican cheese, bell peppers, and tomatoes in attractive serving bowls.
7
Finally, allow diners to fill their own tacos by providing them with the necessary ingredients and letting them assemble their own delicious meals.
