Ingredients
- 2 cups chopped, cooked chicken
- 1/2 (4 ounce) can chopped green chilies
- 1 (7 ounce) can prepared green chile salsa
- 2 cups whipping cream
- 1/2 teaspoon salt
- oil for frying
- 12 corn tortillas
- 1 1/2 cups shredded Monterey Jack cheese
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer metric).
2
In a large bowl, combine the chicken, chilies, and salsa, mixing them thoroughly until you get an even blend. Set this mixture aside for now.
3
In another dish, whisk together the whipping cream and salt until they're perfectly combined. Place this mixture aside as well.
4
Heat a generous amount of oil in a large, heavy skillet over the medium-high heat setting. Fry each tortilla in hot oil for just a couple of seconds, until it starts to blister and bubble. Remove the tortilla from the oil immediately and dip it into the cream mixture.
5
Fill each fried tortilla with the chicken mixture, then roll them up and place them seam-side down in a baking dish. Pour the remaining cream mixture over the tortillas, followed by a sprinkle of cheese.
6
Bake these delicious treats in your preheated oven without covering them, until the cheese is melted and bubbly, taking around 15 to 20 minutes.
