- 1 cup chopped fresh spinach

- 3 large eggs
- 3/4 cup half-and-half
- 1/2 cup mayonnaise
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 pinch salt-free seasoning blend (such as Mrs. Dash), or to taste
- 1 pinch herbes de Provence, or to taste

Preheat your oven to the desired temperature of 350 degrees Fahrenheit or 175 degrees Celsius.

Take a quarter cup of Cheddar cheese and sprinkle it into the pastry shell.

Mix together 1 pound of chicken, a handful of fresh spinach leaves, the remaining three-quarters cup of Cheddar cheese, and 1/2 medium-sized onion in a bowl; transfer the mixture to the pastry shell.

In another bowl, whisk together 2 large eggs, half a cup of half-and-half milk, 1/4 cup of mayonnaise, a pinch of salt, a few grinds of black pepper, a dash of seasoning blend, and some dried herbes de Provence until the ingredients are fully incorporated; pour over the chicken mixture.

Bake in the preheated oven until a knife inserted into the center comes out clean, taking 35 to 40 minutes.
