Grilled Chicken with Peanut Sauce
Ingredients
  • 1 pound skinless, boneless chicken thighs, cut into 1/2 inch strips
  • 1 clove garlic, minced
  • 2 teaspoons minced fresh ginger root
  • 1 tablespoon fish sauce
  • 2 teaspoons peanut oil
  • 4 shallots, minced
  • 2 teaspoons minced garlic
  • 2 teaspoons minced fresh ginger root
  • 2 small red chile peppers, seeded and minced
  • 1/2 cup crunchy peanut butter
  • 1 3/4 cups coconut milk
  • 2 teaspoons soy sauce
  • 2 teaspoons brown sugar
  • 1 1/2 tablespoons fish sauce
  • 1 1/2 tablespoons lime juice
  • 12 wooden skewers, soaked in water for 1 hour

Combine chicken, minced garlic, grated ginger, and 1 tablespoon of fish sauce in a bowl. Mix until the chicken is evenly coated with the marinade, then cover and refrigerate for 1 hour.

Meanwhile, heat peanut oil in a skillet over medium heat. Add sliced shallots, minced garlic, grated ginger, and chopped chile peppers to the skillet. Cook, stirring constantly, until the shallots start to turn golden brown, approximately 7 minutes. Lower the heat to low and stir in peanut butter, coconut milk, soy sauce, brown sugar, 1 1/2 tablespoons of fish sauce, and fresh lime juice until the mixture is smooth. Simmer the sauce gently over low heat for 10 minutes, then remove it from the heat and keep it warm.

Prepare an outdoor grill for medium-high heat by lightly oiling the grates. Thread chicken onto skewers.

Grill the chicken skewers over preheated medium-high heat until they reach an internal temperature of 165 degrees Fahrenheit, flipping them every 3 minutes. Serve the grilled chicken with the warm peanut sauce.
