  • 2 teaspoons yellow curry powder
  • 1 teaspoon white sugar
  • 1 teaspoon fish sauce
  • 1/2 teaspoon granulated garlic
  • 1 pound skinless, boneless chicken breasts, cut into strips
  • 8 skewers
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/4 cup creamy peanut butter
  • 1 tablespoon lime juice

Combine coconut milk, curry powder, sugar, fish sauce, and minced garlic in a bowl. Add chicken pieces and mix well to coat them evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, allowing the flavors to meld together.

Remove chicken from marinade and gently shake off any excess liquid. Discard the remaining marinade, as it's no longer needed. Thread marinated chicken onto skewers, making sure they're securely attached.

Heat olive oil in a large skillet over medium-high heat. Cook chicken skewers in hot oil until they're nicely browned and cooked through, 3 to 4 minutes on each side.

Bring the remaining coconut milk to a gentle simmer in a small saucepan over medium heat. Stir in the remaining curry powder and let it simmer for 4 minutes, allowing the flavors to blend together. Add chicken broth, peanut butter, lime juice, sugar, and fish sauce; simmer for 1 minute. Serve the rich dipping sauce alongside the cooked chicken skewers.
