  • 1/2 cup Italian-seasoned bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 cup all-purpose flour
  • 1 egg
  • 1 tablespoon lemon juice
  • 2 skinless, boneless chicken breast halves
  • 1/2 cup pizza sauce, divided
  • 1/2 cup shredded mozzarella cheese, divided
  • 4 slices pepperoni, or to taste - divided

Preheat your oven to the highest temperature setting, which is 400 degrees F (200 degrees C).

In a separate container from the one you'll use to mix the egg, combine bread crumbs, Parmesan cheese, salt, and black pepper. Place flour in a separate container for coating purposes.

In a third bowl, whisk together the egg and lemon juice until well combined.

Dip each chicken breast into the egg mixture, then coat in flour; dip again in the egg mixture and finally coat with the bread crumb mixture until fully covered.

Place the coated chicken breasts into a baking dish.

Bake in the preheated oven until the chicken is cooked through and the crumbs are golden brown, taking approximately 20 minutes.

Spoon a generous amount of pizza sauce onto each chicken breast, followed by half the mozzarella cheese and half the pepperoni slices.

Bake until the chicken is no longer pink in the center and the juices flow freely, adding an additional 10 minutes to the cooking time. Use a meat thermometer to check if the chicken has reached an internal temperature of at least 160 degrees F (70 degrees C).
