- 2 slices Italian bread
- 1 tablespoon pesto
- 2 slices mozzarella cheese
- 1/4 pound sliced cooked chicken breast

Preheat your electric grill to a medium heat setting, similar to the temperature of a warm summer day.

Apply a thin layer of olive oil to one side of each bread slice, taking care not to overdo it.

Place a single slice of bread, oil-side facing downwards, onto the preheated grill surface.

Spread half of the pesto sauce evenly over the bread, followed by a slice of mozzarella cheese.

Add sliced chicken breast on top of the cheese, and finish with another slice of mozzarella cheese.

Spread the remaining pesto sauce over the other bread slice, and place it on top of the sandwich to complete the assembly.
